1. Prepare the Dough
In a large mixing bowl, beat the softened butter and caster sugar until smooth and creamy. Add the egg yolk and mix until fully incorporated.
Add the flour, desiccated coconut, and a pinch of salt. Mix until a soft dough forms.
Shape the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour.
2. Preheat the Oven
Preheat the oven to 180°C (350°F) and line two baking trays with baking parchment.
3. Roll and Cut the Cookies
Lightly flour your work surface and roll the chilled dough to about ½ cm (¼ inch) thick.
Cut out cookies using your favourite cookie cutter and place them on the prepared baking trays, leaving a little space between each cookie.
4. Bake the Coconut Cookies
Bake for 10–12 minutes, or until the edges are just beginning to turn lightly golden. The cookies should remain fairly pale.
Let the cookies cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
5. Toast the Almonds
While the cookies cool, toast the sliced almonds in a dry frying pan over medium-low heat for 3–5 minutes, stirring frequently, until lightly golden and fragrant. Transfer them to a plate and allow them to cool completely.
6. Melt the Chocolate
Melt the white chocolate with the coconut oil over a pan of barely simmering water or in short bursts in the microwave, stirring until smooth.
7. Decorate
Dip the top of each cooled cookie into the melted white chocolate. Allow the excess chocolate to drip off.
Immediately sprinkle with desiccated coconut and/or the toasted sliced almonds before the chocolate begins to set.
8. Let the Chocolate Set
Place the decorated cookies on a sheet of baking parchment and allow the chocolate to set completely before serving or storing.
