Ingredients for the egg wash
1. Activate the yeast
In a mixing bowl, dissolve the yeast with 1 teaspoon of sugar in 4 tablespoons of lukewarm water and leave it to stand until foamy. It takes about 5-10 minutes. If it is not foamy, start with new yeast.
2. Make the dough
In a large mixing bowl, combine the flour, sugar, and a pinch of salt. Give it a whisk. In a saucepan, heat the milk and butter until lukewarm and the butter melts. Add this mixture and the activated yeast to the flour, then knead by hand or with the dough hook of a mixer until you get a smooth, elastic dough. Set the chocolate chips and the almond aside for later use. Cover the dough with a tea towel and let it rise for an hour, or until it doubles in size.
3. Shape the dough
Once the volume has doubled, place the dough on a lightly floured work surface and knead in the chocolate chips, except 1 tablespoon. Separate about a fifth of the dough, then form a ball and place it in the middle of a baking tray lined with baking paper. Divide the remaining dough into 8 equal pieces and hide an almond in one of them.
Place these dough balls around the larger one so that they touch each other very slightly. Spread the remaining chocolate chips on the dough balls and press them down lightly. Cover the dough with a tea towel and let it rise for 20 to 30 minutes.
4. Preheat the oven
In the meantime, preheat the oven to 180°C (350°F).
5. Bake
Whisk together the egg yolk and a tablespoon of milk. Brush the dough balls with the mixture and sprinkle with sliced almonds. Bake the Three Kings Cake for approximately 25-30 minutes.
6. Serve
Allow the cake to cool on a wire rack for at least 10-15 minutes before serving. It is best to prepare the cake on the day of consumption.
