1. Activate the yeast
Dissolve the yeast with 1 teaspoon of sugar in 4 tablespoons of lukewarm water and leave to stand until foamy. It takes about 5-10 minutes. Meanwhile, weigh and measure the ingredients.
2. Make the dough
Heat the milk in a saucepan and melt the butter in it. Allow to cool to room temperature, then add an egg along with the sugar and whisk.
Weigh the flour, add a pinch of salt, and, if desired, cinnamon, then stir briefly. Add the milk mixture as well as the activated yeast. Knead with the dough hook of the hand mixer for 5-10 minutes.
After kneading, cover the dough with a tea towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
3. Shape the dough
Transfer the dough to a lightly floured surface, knead it a few times with your hands, then divide it into 6-8 equal parts. Roll out each piece, then start on one side, roll up the dough, and shape it into a rope about 30 cm (12″) long. Now hold the rope in the middle and wrap the two ends around each other. Place the roll on a baking tray lined with baking parchment. Proceed in the same way with the remaining dough. Cover the rolls with a tea towel and let them rest for about 30 minutes.
4. Preheat the oven
Towards the end of the resting time, preheat the oven to 180°C (350°F). Whisk together the egg yolk and milk, brush on the rolls, and spread sliced almonds on top.
5. Bake
Bake the sweet dinner rolls in the preheated oven for 15-20 minutes, or until the rolls turn golden brown.
6. Serve
Once the rolls are done, remove them from the oven and place them on a wire rack to cool slightly. Enjoy your homemade sweet dinner rolls.
