1. Make the dough
Whisk together the flour, sugar, and a pinch of salt in a large bowl. Take a grater and grate the cold butter into the bowl. Use your hands to rub the butter into the flour. Be careful not to over touch the dough. Use only your fingertips to do it. Knead in the 3 tablespoons of sprinkles.
Once the ingredients start to combine, place the dough on a piece of lightly floured baking parchment. Using a lightly floured rolling pin, roll out the dough to about half a centimetre (¼ inch) thick. The rolled-out dough can be of any shape as long as it is uniform in thickness.
2. Chill the dough
Place the piece of parchment paper with the dough on it on a baking sheet or cutting board and cover with cling film. Refrigerate for at least 30 minutes to an hour.
3. Make the cookies
Once chilled, preheat the oven to 180°C (350°F).
Cut the dough into shapes with a cutter. Roll out the remaining dough again and keep cutting until it is all used up. After cutting out the cookies, spread the remaining sprinkles over the cookies and press them down lightly.
4. Bake
Arrange the cookies on the baking parchment, slide onto a baking tray, and bake for 6-10 minutes, or until lightly browned around the edges.
Let the cookies cool on the baking tray for 5 minutes, then transfer them to a cooling rack to cool completely.
