Ingredients for the egg wash
1. Preheat the oven
Preheat your oven to 200°C (395°F). Line a baking tray with baking parchment or lightly grease it.
2. Make the dough
In a large mixing bowl, combine the plain flour, sugar, baking powder, baking soda, salt, and chilli flakes. Mix well with a whisk or fork to ensure all the dry ingredients are evenly distributed.
Grate the cold, unsalted butter into the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it looks like fine crumbs. The butter should be well distributed in the flour.
Stir the grated cheddar, crumbled feta cheese, and finely diced red pepper into the flour and butter mixture. Make sure the cheese and pepper are evenly distributed throughout the dough. Pour the buttermilk into the bowl and mix gently with a spatula or wooden spoon until the dough comes together. Avoid over-mixing; just mix until all the ingredients are incorporated.
Transfer the dough to a lightly floured surface. Shape the dough into a rough circle or rectangle about 2.5 cm (1″) thick. The dough can be of any shape as long as it is uniform in thickness. Take a round cookie cutter (mine is 6 cm (2 ½”) in diameter) and dip it in some flour. Cut out as many scones as possible, knead the remaining dough again, and repeat the process. I got twelve scones in total.
Place the scones on the prepared baking tray, leaving some space between them. In a small bowl, whisk together the egg yolk and milk to make the egg wash.
Brush the tops of the scones with the egg wash. This will give the scones a nice golden colour as they bake.
3. Bake
Bake the scones in the preheated oven for about 15 to 20 minutes, or until lightly golden on top. The exact baking time may vary depending on the size and thickness of your scones, so keep an eye on them to avoid over-baking.
Once baked, remove the scones from the oven and set them on a wire rack to cool slightly.
4. Serve
Serve the spicy scones warm or at room temperature. Enjoy them on their own, or with your favourite spreads, dips, or side dishes.
