1. Preheat the oven
Preheat the oven to 180°C (350°F) and prepare a 25×33 cm (10”×12”) baking frame or a baking tin by greasing and lining it with baking parchment.
2. Prepare the crust
In a mixing bowl, cream together 225 grams of softened butter and 100 grams of caster sugar until a light, fluffy mixture forms. Add 250 grams of plain flour and a pinch of salt, mixing until just combined. Press the mixture evenly into the bottom of the prepared baking tin.
3. Bake
Bake the crust in the preheated oven for 20-25 minutes, or until it turns golden brown. After baking, remove the crust from the oven, but do not turn the oven off.
Once the crust is baked, spread 350 grams of lemon curd evenly over the warm crust. Return the baking tin to the oven and bake for another 20 to 25 minutes, or until the edges are set and the lemon curd has slightly firmed up.
4. Serve
Allow the lemon bars to cool completely in the baking tin. Once cooled, cut the lemon bars into squares or rectangles with a sharp knife. For a decorative touch, dust the top with icing sugar before serving.
