1. Peel the potatoes and dice them into small, even pieces. Cook them in a saucepan of water until tender. This usually takes about 10-15 minutes.
2. In a saucepan, cover the egg with cold water. Place the saucepan on the stove over medium heat and bring the water to a gentle boil. Once the water is boiling, reduce the heat to low and allow the egg to simmer for about 7-10 minutes.
3. In a non-stick frying pan, sauté the diced onions in vegetable oil until they become translucent.
4. Place all the ingredients into a blender or food processor.
5. Blend the ingredients until you achieve a smooth and creamy consistency.
6. Taste the mixture and adjust the seasoning by adding more salt, pepper, or other desired ingredients to taste.
7. Transfer the savoury potato spread to the refrigerator for 30 minutes before serving.
8. Garnish with spring onion slices or as desired.
