1. Prepare the base
In a bowl, combine the melted butter and caster sugar. Mix well until the sugar dissolves. Add the ground biscuits to the butter mixture. Stir until all the ingredients are well combined, and the mixture resembles wet sand.
Place a baking ring with a diameter of 24 cm (9″) on a serving platter or cake stand. Scoop out the mixture and spread it evenly in the baking ring. Then place the base in the fridge to chill until the filling is ready.
2. Prepare the filling
Prepare the gelatin powder according to the package direction. In a mixing bowl, combine the Greek yogurt and sugar. Stir until the sugar is dissolved, and the mixture is smooth. Gradually pour the gelatin into the Greek yogurt mixture while stirring continuously. In another mixing bowl, whip the whipping cream until it forms soft peaks. Gently fold the whipped cream into the yogurt until well combined. Add the diced peaches to the yogurt mixture and gently fold them in using a spatula.
3. Assemble the cake
Pour the yogurt filling onto the biscuit base in the baking ring. Use a spatula to spread it evenly. Place the cake in the refrigerator and let it chill for at least 6 hours, or until the filling is set.
4. Serve
Once the cake has set, carefully remove the baking ring. Garnish the top of the cake with additional diced or sliced peaches or any desired toppings. Slice and serve chilled.
