1. Make the Base
Place a baking ring with a diameter of approximately 18 cm (7″) on a serving platter or cake stand.
Arrange the chocolate wafer rolls upright, side by side, around the inside edge of the baking ring, with the striped side facing outwards. Place them as closely together as possible to create an even border.
In a mixing bowl, combine 100 grams of melted butter and 175 grams of ground digestive biscuits. Stir until the ingredients are well combined, and the mixture resembles wet sand.
Spoon the biscuit mixture into the centre of the tin and press it firmly and evenly over the base, taking care not to disturb the wafer rolls.
Transfer the baking tin to the refrigerator while you prepare the ermine filling.
2. Cook the Ermine Filling
In a saucepan, whisk together 30 grams of plain flour and 300 millilitres of milk until the mixture is smooth and no lumps remain. Place the saucepan over medium heat and cook, stirring constantly, until it thickens to a pudding-like consistency. The process can take 5-7 minutes.
Once thickened, transfer the mixture to a bowl. Stir occasionally or press a piece of plastic wrap directly onto the surface to prevent skin from forming. Allow it to cool completely to room temperature.
3. Make the Ermine Filling
In a mixing bowl, cream 250 grams of softened, unsalted butter with 150 grams of caster sugar with an electric mixer until light and fluffy, about 4–5 minutes.
Add the cooled flour mixture one tablespoon at a time, beating well after each addition until the filling is smooth and silky. Stir in vanilla extract, if using.
Spread the filling evenly over the chilled biscuit base, smoothing the top with an offset spatula or the back of a spoon.
4. Prepare the Chocolate Ganache
Place 200 grams of chopped dark chocolate in a heatproof bowl.
Heat 200 millilitres of whipping cream in a small saucepan over medium heat until it just begins to simmer. Do not let it boil.
Pour the hot cream over the chocolate and let it stand for 2–3 minutes. Stir gently until the chocolate has completely melted and the ganache is smooth and glossy.
Allow the ganache to cool to room temperature, stirring occasionally.
5. Assemble the Cake
Pour the cooled ganache over the ermine filling and gently spread it into an even layer.
Refrigerate the cake for at least 2 hours, or until the ganache has set and the filling is firm.
Carefully remove the baking ring before serving. For clean slices, dip a sharp knife in hot water and wipe it dry between each cut.
Chocolate Wafer Substitutes: If you can’t find rolled chocolate wafers, try chocolate-covered biscuits or any other crispy chocolate treats.
Flavoured Ganache: Add a tablespoon of your favourite liqueur to the ganache for an extra kick of flavour.
Decorations: Top the cake with fresh berries or edible flowers to give it a visual touch.
