Additional Ingredients
1. Make the Base
In a mixing bowl, combine 100 grams of melted butter and 175 grams of ground digestive biscuits. Stir until the ingredients are well combined, and the mixture resembles wet sand.
Place a baking ring with a diameter of approximately 18 cm (7″) on a serving platter or cake stand. For easier handling, consider placing a smaller baking ring within the larger one, if available.
Now arrange the chocolate wafers vertically next to each other between the two baking rings.
Fill the smaller ring with the biscuit-butter mixture. Carefully remove the inner ring by gently pressing the base mixture against the wafers to secure them in place. Set the base in the fridge until the filling is ready.
2. Prepare the Ermine Filling
In a saucepan, whisk together 30 grams of plain flour and 300 millilitres of milk until the mixture is smooth and there are no lumps. Place the saucepan over medium heat and cook, stirring constantly, until it thickens to a pudding-like consistency. The process can take 5-7 minutes.
Once thickened, remove the saucepan from the stove and let the mixture cool to room temperature. Stir occasionally to prevent skin from forming.
In a mixing bowl, cream 250 grams of unsalted butter with 200 grams of sugar until light and fluffy.
Finally, add the flour-milk mixture to the sugar-butter mixture as well as the vanilla extract, and mix with a hand mixer to form a homogeneous mass. Remove the cake base from the refrigerator and distribute the Ermine filling evenly over it. Make sure that it is well distributed. Refrigerate it until the ganache is prepared.
3. Prepare the Ganache
Heat 200 millilitres of whipping cream in a saucepan, but do not bring it to a boil. Meanwhile, roughly chop 200 grams of dark chocolate and place it in a heatproof bowl. Pour the heated cream over the chocolate and leave for 2-3 minutes so that the chocolate softens gently. Stir cautiously with a spatula until the chocolate is melted, and the mixture is homogeneous. Allow the ganache to cool to room temperature before pouring it over the Ermine filling. Smooth out the ganache and refrigerate the cake for at least 2 hours.
4. Serve
Once the cake has set, carefully remove the baking ring. Slice the No-Bake Cake with Ermine Filling and serve chilled.
