1. Even if you use canned chickpeas, let them simmer briefly in plenty of water for 15 minutes so that they become even softer. Let them cool before proceeding.
2. In a food processor, combine the chickpeas (set aside 1-2 tablespoons for garnish), minced garlic cloves, feta cheese, lemon juice, olive oil, tahini, and salt. Add 30 millilitres of water.
3. Blend the ingredients until you get a smooth and creamy consistency. If it is too thick, you can gradually add more water until the desired consistency is reached.
4. Taste and adjust the seasoning if necessary. Depending on your preference, you can add more salt or lemon juice.
5. Serve the hummus in a bowl, drizzle with a little olive oil, and garnish with toppings of your choice, such as a sprinkle of sumac, some chickpeas, or fresh parsley.
