1. Prepare lentils and quinoa
In a big saucepan, cook the lentils until they are soft. Once cooked, allow them to cool completely.
In a smaller saucepan, cook the quinoa according to the package instructions. Allow the quinoa to cool completely after cooking.
2. Preheat the oven
Preheat your oven to 180°C (350°F) and line a 23 cm (9″) diameter baking dish with baking parchment.
3. Make the batter
In a mixing bowl, combine 250 grams of the cooked lentils, 100 grams of the cooked quinoa, 1 teaspoon of baking powder, 1 teaspoon of salt, 100 millilitres of water, 1 egg, and 2 tablespoons of olive oil. Mix until well combined. Use a food processor or blender to blend all the ingredients.
4. Bake
Transfer the batter into the lined baking tin, spreading it evenly. Sprinkle with 1-2 teaspoons of sesame seeds on top and bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the centre comes out clean.
5. Serve
Once baked, allow the Lentil Quinoa Bread to cool slightly in the baking tin, then transfer it to a wire rack to cool completely. Once cooled, slice and enjoy!
