Ingredients for the Lentil Potato Curry Topping
Additional Ingredients
1. Cook the Lentils
First, rinse 100 grams of red lentils under cold running water. In a medium-sized saucepan, combine the rinsed lentils and 250 millilitres of vegetable broth.
Bring it to a boil and then reduce the heat to low. Simmer until the lentils are soft, about 15 minutes.
2. Sauté the Onions, Garlic, and Ginger
In a frying pan, heat 1 tablespoon of vegetable oil and add 1 finely chopped onion. Sauté the chopped onion until translucent. Then add the garlic and ginger and sauté until fragrant, about 1-2 minutes.
3. Add the Spices and Tomatoes
Stir in 1 tablespoon of curry powder, 1 teaspoon of ground cumin, ½ teaspoon of turmeric powder, ½ teaspoon of chilli powder, 1 teaspoon of garam masala, and salt to taste to coat the onions. Then add 200 grams of chopped tomatoes and cook for about 5 minutes until a sauce forms.
4. Add the Potatoes
Once the tomatoes break down into a sauce, add 150 grams of diced potatoes to the pan. Stir them into the spiced tomato mixture.
5. Cook
Continue cooking until the potatoes are tender and the curry has thickened, about 15-20 minutes.
6. Add the Cooked Lentils
Add the cooked lentils along with more vegetable broth or water if the mixture becomes too thick.
7. Cool Slightly
Once cooked, remove the lentil potato curry from the heat and let it cool slightly.
8. Preheat the Oven
Preheat your oven to 245°C (475°F) and line a baking tray with baking parchment.
9. Assemble the Pizza
On a lightly floured surface, roll out the pizza dough to the desired thickness, then transfer it to the lined baking tray.
Distribute the prepared lentil potato curry evenly over the pizza base, leaving a small border for the crust.
Spread 100 grams of grated Mozzarella cheese over the curry layer. For a pop of colour, top with the diced red peppers.
10. Bake
Bake the Lentil Potato Curry Pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
11. Serve
Once baked, remove the pizza from the oven, slice in wedges, and serve hot.
Tips for Perfect Lentil Potato Curry Pizza
Cheese Alternatives: For a vegan option, use plant-based cheese like vegan mozzarella cheese or sprinkle nutritional yeast on top for a cheesy flavour.
Adjust the Spiciness: Change the amount of chilli flakes or add fresh chillies to the lentil potato curry to control the spiciness to your liking.
Crispier Crust: For an extra crispy crust, pre-bake the pizza dough for 5-7 minutes before adding the toppings.
Variations
Sweet Potato Lentil Curry Pizza: Swap regular potatoes for sweet potatoes. This gives a slightly sweeter taste and a hint of orange colour.
Lentil Potato Curry with Spinach: After simmering the curry, stir in a handful of fresh spinach leaves for extra nutrition.
Lentil Potato & Cauliflower Curry Pizza: Roast small cauliflower florets separately and add to the lentil and potato curry topping for more texture.
