The quantities given are sufficient for a jar of approximately 250 millilitres.
1. Prepare the strawberries by washing, hulling, and roughly chopping them.
2. Place 500 grams of chopped strawberries, 140 grams of sugar, and the juice of half a lemon in a medium-sized saucepan.
3. Bring the strawberries to a boil over medium heat, stirring frequently. Once it boils, reduce the heat to low to allow the strawberries to simmer.
4. Simmer the mixture, stirring frequently, until the jam thickens, about 45 minutes.
5. If desired, add half a teaspoon of dried thyme in the last few minutes of cooking.
6. When the jam has thickened to your liking, remove it from the heat. If not, continue to simmer until the desired consistency is reached.
7. For a smoother consistency, purée the jam with an immersion blender.
8. Allow the jam to cool completely before placing it in an airtight container in the refrigerator.
9. Serve your Homemade Strawberry Jam on your favourite bread or scones.
