1. Make the dough
In a mixing bowl, weigh the flour. You can proceed with making the dough in the bowl or place the flour on the counter. Create a well in the centre of your flour and crack the eggs into it. Using your clean hands, gently break the yolks and start incorporating the flour from the edges into the centre. The whole process is going to be messy, and it is going to take time, so be patient. Continue kneading until the dough forms. It will take approximately five minutes. Add water a tablespoon at a time, if necessary. But be careful with it; you don’t want too much water in the dough. Once the dough gets smooth, form a ball, wrap it in cling film, and let it rest for 30 minutes in the refrigerator.
2. Roll out the dough
Lightly flour the work surface, take out the dough from the fridge, and divide it into 4 equal pieces for easier work. Set the other three pieces aside and cover them with cling film. Roll out each piece into a thin sheet. Take your time with this step. Roll it as thin as you can because the dough thickens when cooked.
3. Cut the dough
Once you have rolled the dough out as thin as possible, fold it several times over itself. Using a knife, cut the dough roughly into half a centimetre thick strips, then carefully unravel them. Repeat the process with the remaining dough.
Alternatively, you can use the dough for your favorite lasagne recipe. In this case, cut the dough as large as the baking dish you want to use.
4. Storage
You can store your homemade pasta in an airtight container in the fridge for up to three days.
5. Serve
To cook your pasta, bring a pot of salted water to a boil. Add the pasta and cook for about 2-3 minutes. It cooks quickly, so keep an eye on it. Serve your homemade pasta with your favourite sauce.
