Ingredients for the Egg Wash
1. Activate the Yeast
In a small bowl, dissolve the yeast and 1 teaspoon of sugar in 4 tablespoons of lukewarm water. Stir gently and let it sit until the yeast is foamy; it takes about 5-10 minutes.
2. Prepare the Dough
In a large mixing bowl, combine 500 grams of plain flour and add a pinch of salt. Set it aside.
In another mixing bowl, whisk together 2 egg whites, 170 millilitres of lukewarm milk, 80 millilitres of vegetable oil, and 50 millilitres of lukewarm water.
Meanwhile, the yeast has had enough time to rise. Add the liquid ingredients and the activated yeast to the flour, then knead with the dough hook of the hand mixer until a dough forms. After the dough has come together in the mixing bowl, it’s time to knead by hand for a few minutes to incorporate as much air as possible into the dough. Transfer the dough to a lightly floured surface and knead it by hand for several minutes. Once the dough is smooth and elastic, place it in a clean bowl. Cover it with a tea towel, and let it rise in a warm place for 1 hour, or until doubled in size.
3. Shape the Rolls
Once the dough has risen, place it on a lightly floured work surface and knead it a few times to release any air bubbles. Divide the dough into 10-12 equal parts. Roll each ball into a slightly oblong shape. Score one end a few times with a pizza cutter or knife for a nice finish, and place a generous amount of cream cheese in the centre. Season the cream cheese to your taste before adding it to the dough.
Gently roll up each dough piece around the cream cheese filling, starting from the unscored end and rolling towards the scored end.
Place the filled dough in a crescent shape on the baking tray. Proceed in the same way with the remaining dough. Cover the filled rolls with a tea towel and let them rest for about 30 minutes.
4. Bake
Towards the end of the resting time, preheat the oven to 180°C (350°F). In a small bowl, whisk together 2 egg yolks and 4 tablespoons of milk. Brush each roll generously with the egg wash, and sprinkle with sesame seeds and/or linseeds. Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown.
5. Serve
Once done, remove the rolls from the oven and allow them to cool slightly on a wire rack before serving. Enjoy your Delicious Rolls filled with Cream Cheese.
