1. Preheat the oven
Preheat your oven to 180°C (350°F) and adjust the rack to the middle position of the oven. Lightly grease a baking dish with a diameter of approximately 24 cm (9”).
2. Prepare the batter
In a frying pan, fry sliced mushrooms and diced onions with a little olive oil over medium heat until golden brown and caramelized.
While the mushrooms and onions are cooking, prepare the cheese mixture by combining 180 grams of cream cheese, 2 eggs, 150 millilitres of milk, 150 grams of grated cheese, and 200 grams of roughly chopped tortillas in a bowl.
Once the mushrooms and onions are done, let them cool slightly before adding them to the mixture. Mix well to distribute the ingredients evenly. Adjust the seasoning with salt and pepper, and add fresh parsley for extra flavour.
3. Bake
Transfer the entire mixture to the prepared baking dish and bake it in the preheated oven for 20-25 minutes, or until the top is golden brown and the centre is set.
4. Serve
Allow it to cool for a few minutes before slicing and serving. Enjoy your Creamy Mushroom Tortilla Bake.
