1. Preheat the Oven
Preheat your oven to 180°C (350°F).
Lightly grease a baking dish large enough to hold the seven rolled crêpes snugly side by side.
2. Make the Cream Cheese Filling
In a bowl, combine 200 grams of cream cheese with 2 tablespoons of milk and stir until smooth and creamy.
The filling should be soft enough to spread easily over the crêpes. If it feels too thick, add the remaining tablespoon of milk, a little at a time.
3. Fill the Crêpes
Place one crêpe on your work surface and spread it evenly with the cream cheese mixture.
Reserve about 2 tablespoons of the cream cheese mixture for the topping.
Spread approximately 150 grams of apple sauce over the cream cheese, dividing it evenly between the seven crêpes.
Roll each crêpe up gently and place it seam-side down in the prepared baking dish.
Arrange the rolls close together so they support each other while baking.
4. Add the Topping
Spread the reserved cream cheese mixture thinly over the tops of the rolled crêpes.
Scatter the sliced almonds over the top.
In a small bowl, mix 2 tablespoons of caster sugar and 1 teaspoon of cinnamon, then sprinkle the mixture evenly over the crêpe rolls.
5. Bake
Bake for 15–20 minutes, until the crêpes are heated through and the topping is lightly golden.
Keep an eye on the almonds towards the end of the baking time so they don’t become too dark.
6. Serve
Allow the crêpe rolls to cool for a few minutes before serving.
They are best enjoyed warm, when the cream cheese is soft and the apple filling is fragrant.
This recipe uses seven crêpes. If you’re making the full batch from my Basic Crêpe Recipe, you’ll have a few left over — enjoy them with your favourite toppings or save them for another recipe.
Use Room-Temperature Ingredients: The cream cheese is much easier to combine with the milk and spread smoothly when it isn’t cold from the refrigerator.
Don’t Overfill the Crêpes: A relatively thin, even layer of cream cheese and apple sauce makes the crêpes easier to roll and keeps the filling from spilling out during assembly.
Roll Gently: Crêpes are delicate, especially once filled. Roll them firmly enough to hold their shape but without squeezing out the filling.
Keep an Eye on the Topping: The cinnamon sugar and almonds can brown quickly, so check the rolls towards the end of baking.
Add walnuts: Replace some or all of the sliced almonds with finely chopped walnuts for a deeper, more autumnal flavour.
Add a Little Orange Zest: A small amount of finely grated orange zest in the cream cheese filling would add a lovely freshness and works beautifully with both apple and cinnamon.
Make Them Extra Indulgent: Serve the warm crêpe rolls with a spoonful of softly whipped cream or a scoop of vanilla ice cream.
These crêpe rolls are lovely as a warm dessert, afternoon treat or cosy weekend breakfast.
For serving, you can keep them simple with just their cinnamon-almond topping, or add a little whipped cream, vanilla ice cream or an extra spoonful of warm apple sauce.
