1. Make the dough
Briefly beat the butter in a mixing bowl until creamy. Add the icing sugar and continue beating until the butter is light and fluffy. Mix the plain flour, cornstarch, and a pinch of salt, and sift into the butter-sugar mixture. Process everything into a homogeneous dough (add 1 tablespoon cold water, if necessary), and roll it out into a rectangle on baking parchment.
2. Chill the dough
Pull the baking paper with the dough on it onto a cutting board or a tray and place it in the fridge for at least one hour.
3. Preheat the oven
After the dough has rested, preheat the oven to 180°C (350°F).
4. Shape the dough
Using a dough cutter or knife, cut the dough into the desired size. The sticks can be approximately the same size or have different lengths. It’s entirely up to you.
5. Bake
Place the sticks on the baking parchment, spacing them slightly apart, and bake them in the preheated oven for about 10-15 minutes, or until they turn golden brown.
Once baked, allow the cookie sticks to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely before garnishing.
6. Garnish the sticks
Melt the chocolate with one teaspoon of coconut oil in a heatproof bowl over a water bath. Dip the cookie sticks into the melted chocolate or use a spoon for support. Spread some sprinkles on top immediately, and place the cookie sticks on the baking parchment. Transfer the cookie sticks to the refrigerator and let them chill until the chocolate sets.
7. Serve
Once the chocolate has set, serve your cookie sticks and enjoy it!
