1. Make the Dough
In a large mixing bowl, beat 120 grams of softened butter and 60 grams of icing sugar until light and creamy.
Add 150 grams of plain flour, 40 grams of cornstarch, and a pinch of salt. Mix umtil the dough comes together. If needed, gently knead it with your hands until smooth.
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
2. Preheat the Oven
Preheat the oven to 180°C (350°F) and line two baking trays with baking parchment.
3. Shape the Dough
Lightly flour your work surface and roll out the chilled doughto about 6–7 mm thick.
Using a dough cutter or knife, cut the dough into evenly sized sticks. Place them on the prepared baking tray, leaving a little space between each one.
4. Bake
Bake them in the preheated oven for about 10-15 minutes, or until the edges are just beginning to to turn lightly golden.
Once baked, allow the cookie sticks to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely before garnishing.
5. Melt the Chocolate
Melt 80 grams of chocolate together with one teaspoon of coconut oil in a heatproof bowl over a water bath or in short intervals in the microwave, stirring until smooth.
6. Decorate
Dip one end of each cookie stick into the melted chocolate or use a spoon for support, allowing any excess to dripp off.
Immediately decorate with colourful sprinkles before the chocolate begins to set.
7. Serve
Place the decorated cookie sticks on a sheet of baking parchment until the chocolate has completely hardened.
Serve the Chocolate-Dipped Shortbread Cookie Sticks or store in an airtight container.
Because this dough contains cornstarch, the cookie sticks bake up exceptionally tender with a delicate melt-in-your-mouth texture. Be careful not to overbake them. They should stay mostly pale with only lightly golden edges.
Prepare the dough up to 2 days in advance and keep it refrigerated. You can also freeze the dough for up to 3 months. The baked, undecorated cookie sticks can also be frozen.
Store the decorated cookie sticks in an airtight container at room temperature for up to 1 week. Layer them between sheets of baking parchment to protect the chocolate decoration.
Can I freeze the cookie sticks? Yes. Freeze the baked cookie sticks before decorating for up to 3 months. Thaw completely, then dip them in chocolate and decorate.
Why is there cornstarch in the dough? Cornstarch gives the cookies their delicate, tender, melt-in-your-mouth texture.
Can I make these without sprinkles? Absolutely! Try chopped nuts, toasted coconut, or a drizzle of chocolate instead.
Can I use different chocolates? Yes. Milk, dark, or white chocolate all work beautifully.
Can I make them in different shapes? Of course! While sticks look elegant and are easy to decorate, you can use the same dough for classic cookie cutters.
