Makes 20-25 cookies
1. Prepare the Dough
In a medium bowl, whisk together 120 grams of plain flour, 60 grams of unsalted cocoa powder, ¼ teaspoon of salt, and 1 teaspoon of baking powder.
In a separate bowl, mix 200 grams of caster sugar and 60 millilitres of vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, if using.
Sift the dry ingredients into the wet mixture and mix until a sticky dough forms.
2. Chill the Dough
Cover the dough with cling film and refrigerate for at least 2 hours, or until firm enough to handle.
3. Preheat the Oven
Preheat your oven to 180°C (350°F) and line two baking trays with baking parchment.
4. Shape the Cookies
Scoop tablespoon-sized portions of the dough and roll them into balls. Toll each ball generously in icing sugar. Place the shaped dough about 5 cm (2”) apart on the prepared baking tray.
5. Bake
Bake for 10-12 minutes, or until the cookies have spread slightly, and the tops are cracked. The cookies will be soft but will firm up as they cool.
6. Serve
Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a wire rack. Enjoy your fudgy and festive Chocolate Crinkle Cookies!
Tips for Perfect Chocolate Crinkle Cookies
Here are some tips to make your Chocolate Crinkle Cookies even more delicious:
Chill the Dough: The dough must be well-chilled. Otherwise, it will be too sticky to shape and may spread too much during baking. If the dough becomes sticky while shaping, return it to the fridge for a few minutes.
Even Size: For evenly sized cookies, use a small cookie scoop or tablespoon to ensure they bake evenly.
Generous Coating: Generously roll the cookie dough balls in icing sugar to create the signature crinkle effect.
Avoid Overbaking: The cookies may look underbaked when you take them out of the oven, but they’ll firm up as they cool. Overbaking can lead to dry cookies.
Variations
Here are some variations you can try to put your own spin on the Chocolate Crinkle Cookies:
Spiced Crinkle Cookies: Enhance the flavour with ½ teaspoon cinnamon, a pinch of nutmeg, or a dash of chilli powder for a spicy touch.
Chocolate Chips Crinkle Cookies: For an extra gooey consistency, fold in 50-100g chocolate chips or chopped dark chocolate.
Peppermint Crinkle Cookies: For a festive touch, add ½ teaspoon of peppermint extract in place of vanilla.
Orange Chocolate Crinkle Cookies:
Add 1 teaspoon of orange peel and a dash of orange extract to enhance the citrus flavour.
Nutty Chocolate Crinkle Cookies: For added texture, mix in 30 grams of finely chopped hazelnuts, almonds, or pecans.
