1. Prepare the Batter
In a blender or food processor, pulse the oats until they are finely ground into oat flour.
In a large bowl, mix together 100 grams of the ground oats, 120 grams of plain flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, and 1 tablespoon of caster sugar. Give it a whisk.
In another bowl, whisk together 2 eggs, 240 millilitres of buttermilk, 60 millilitres of milk, 60 millilitres of vegetable oil, and 1 teaspoon vanilla extract (optional) until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix the batter. It’s okay if there are a few lumps.
Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
2. Cook the Pancakes
Preheat a non-stick frying pan over medium-high heat. Grease it lightly with butter or oil.
Using a ladle, pour the batter for each pancake onto the frying pan. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown and cooked through. Repeat with the remaining batter.
3. Serve
Place the Blueberry Oatmeal Pancakes on a plate or platter. Serve them warm, garnished with more blueberries, a drizzle of maple syrup, or a dollop of yogurt.
Conclusion
These Blueberry Oatmeal Pancakes are a delicious and healthy breakfast option that will keep you energised throughout the morning. With the perfect balance of sweet blueberries and healthy oats, these pancakes are sure to become a staple in your breakfast routine. Enjoy them with your favourite toppings!
