1. Preheat the oven and prepare the tin
Preheat the oven to 180 °C (350 °F), and grease a 10cm×25cm (4″×10″) loaf tin with butter.
2. Mash the Bananas and Scrape out the Vanilla Bean
In a mixing bowl or on a plate, mash the ripe bananas with a fork until completely smooth. Score the vanilla pod lengthwise with a knife and scrape out the seeds.
3. Weigh the Ingredients
In a separate mixing bowl, weigh 200 grams of plain flour and mix with 1 teaspoon of baking powder, 1 teaspoon of baking soda, a pinch of salt, ½ teaspoon of cinnamon, and vanilla seeds.
Weigh 110 grams of brown sugar and set it aside.
Roughly chop 50 grams of walnuts. Finally, measure out 80 millilitres of vegetable oil.
4. Mix the Ingredients
In a mixing bowl, add the eggs to the brown sugar and mix with a hand mixer until the sugar has dissolved. While stirring on the lowest setting, pour in 80 millilitres of vegetable oil. Add the flour mixture to the wet ingredients and stir until combined.
Fold in the mashed bananas and the chopped walnuts, mixing well.
5. Bake
Pour the batter into the greased loaf tin and bake in the preheated oven for about 50 – 55 minutes, or until a toothpick inserted into the centre comes out clean.
6. Serve
Once baked, allow the Banana Bread to cool for a few minutes in the loaf tin before transferring it to a wire rack to cool completely.
Slice and serve with a cup of tea or your favourite hot beverage.
