1. Preheat the oven
Preheat the oven to 180°C (350°F) and prepare a standard 12-hole muffin tin by greasing it or lining it with muffin liners.
2. Roast the walnuts
Place a frying pan over medium heat. Once the pan is hot, add the whole 60 grams of walnuts. Stir the walnuts frequently with a spatula to avoid uneven toasting. Keep an eye on the walnuts as they roast. This process usually takes around 5-7 minutes. After toasting, allow the walnuts to cool completely before chopping.
3. Prepare the streusel
Start by making the streusel. By preparing the streusel in advance, you’ll have all the components ready before diving into the batter. This will make the baking process smoother and more organized.
In a mixing bowl, mix 75 grams of flour, a pinch of salt, 30 grams of chopped walnuts, 75 grams of caster sugar, ½ teaspoon of cinnamon, and 90 grams of cold unsalted butter until crumbly. Using your fingertips, rub the butter into the flour mixture, then set the streusel aside.
4. Make the muffins
Grate 2 apples and squeeze the juice of half a lemon over them. Stir briefly and set it aside.
In a mixing bowl, combine 250 grams of plain flour, a pinch of salt, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and 30 grams of chopped walnuts.
In another bowl, whisk together 130 grams of caster sugar, 1 egg, 80 millilitres of vegetable oil, and 250 millilitres of room-temperature milk.
Gradually add the grated apples and the egg mixture to the dry ingredients. Fold gently until everything is just combined. Don’t mix too much.
Spoon the muffin batter into the muffin liners, filling each one about ⅔ full. Evenly sprinkle the streusel mixture onto each muffin.
5. Bake
Bake the apple walnut muffins in a preheated oven at 180°C for about 20-25 minutes, or until a toothpick inserted comes out clean. Once baked, allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack.
6. Make the glaze
For the glaze, mix 70 grams of icing sugar with 2-3 tablespoons of lemon juice until smooth. Once the muffins have cooled, drizzle the glaze over the top for a sweet finish.
7. Serve
Your delicious Apple Walnut Muffins are ready to be enjoyed. A cup of tea or coffee goes perfectly with it.
