1. Preheat the oven and prepare the muffin tin
Preheat the oven to 180 °C (350 °F) and prepare a standard 12-hole muffin tin by greasing it or lining it with muffin liners.
2. Prepare the batter
Start by peeling, quartering, and coring the apples. Score the apple quarters lengthwise and drizzle them with 4 tablespoons of lemon juice. Set them aside.
In a mixing bowl, cream together the butter and sugar using a mixer. Gradually add the eggs, one at a time, and mix until well incorporated. Next, add the yogurt and continue mixing at low speed. In a separate bowl, combine the flour, baking powder, and salt. Add this mixture to the wet ingredients and stir just until the ingredients are combined. Divide the batter evenly between the muffin liners.
3. Bake
Bake in the preheated oven for approximately 20 minutes. Once baked, allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack. Once the muffins have cooled slightly, dust them with icing sugar for an extra touch of sweetness.
