Ingredients for the glaze
1. Preheat the Oven and prepare the Tin
Preheat the oven to 160 °C (320 °F) and grease a 10cm×25 cm (4″×10″) loaf tin.
2. Prepare the Oranges
You need the peel of an orange, so grate it first. After that, cut the same orange and squeeze one half (put the other half aside and save it for the glaze). Chop the second orange into small pieces.
3. Make the Batter
Cream 170 grams of butter and 140 grams of caster sugar until lightened to a yellowish-white colour. Add the grated orange peel and juice of half an orange.
Gradually add eggs, one at a time, mixing well after each addition. Then add 170 grams of plain flour mixed with 1 teaspoon of baking powder, a pinch of salt, and 25 grams of cornstarch.
Using a spatula, carefully fold in 1 finely cut orange and 60 grams of chopped chocolate.
4. Bake
Pour the batter into the prepared loaf tin and bake in a preheated oven at 160 °C (320 °F) for at least 45 minutes, or until a toothpick inserted into the centre comes out clean.
5. Cool and prepare the Glaze
Take the cake out of the oven and let it cool in the tin for a few minutes. Then remove it from the loaf tin and let it cool completely on a wire rack.
Meanwhile, prepare the glaze. Take half of the orange you set aside and squeeze 2-3 teaspoons of orange juice. Mix with 75 grams of icing sugar until a homogeneous mass is formed. After the cake has completely cooled, apply the glaze evenly over the top.
6. Serve
Allow the glaze to set before slicing and serving.
