1. Activate the yeast
In a small mixing bowl, dissolve the yeast with 1 teaspoon of sugar in 100 millilitres of lukewarm water and leave it to stand until foamy. It takes about 5-10 minutes.
2. Make the dough
In a large mixing bowl, whisk together the flour and a pinch of salt. Add the milk, olive oil, and activated yeast. Mix with the dough hook of the hand mixer until a smooth dough is formed. Don’t be alarmed that the dough will be very moist and sticky. Cover the dough with a tea towel and let it rise in a warm place for about an hour, or until it has doubled in size.
3. Shape the dough
Since the dough is very soft, use a spatula for the next steps. Transfer the dough to a lightly floured surface. Knead the dough a few times with a spatula, and then divide it into four equal parts. Resist the temptation to knead in a lot of flour; otherwise, the flatbreads will become too dry. Transfer each portion to the baking tray lined with parchment paper and press it flat. Cover it with a tea towel and let it rest for 30 minutes.
4. Preheat the oven
Meanwhile, preheat the oven to 200°C (395°F).
5. Bake
When the oven reaches the desired temperature, brush the dough with the olive oil. You can dip your fingertips into the oil and flatten the dough a bit more. Bake for 5-7 minutes, or until the flatbreads have a nice golden brown colour. Keep a close eye on them to prevent burning.
6. Serve
Once baked, remove the flatbreads from the oven and immediately brush them with more olive oil. Optional: You can infuse them with herbs and/or minced garlic. Serve the flatbreads warm as a delicious side dish or with your favourite dips.
