1. Preheat the oven
Preheat the oven to 200°C (395°F), adjust the oven rack to the middle position, then line the baking tray with parchment paper and set aside.
2. Make the dough
In a mixing bowl, weigh the plain flour, then add a pinch of salt, baking powder, and a teaspoon of caster sugar. Give it a whisk. Grate the cold butter into the mixture and, using your fingertips, rub the butter into the flour mixture until the mix looks like fine crumbs. Add the milk and knead into a smooth dough.
Roll out the dough on a lightly floured surface to about 2.5 cm (1″) thick. Take a round cookie cutter (mine is 6 cm/2 ½” in diameter) and dip it in some flour. Cut out as many scones as possible, knead the remaining dough again, and repeat the process. I got nine scones in total.
3. Bake
Arrange the scones on the baking tray lined with parchment paper, brush with a beaten egg, and bake in the preheated oven for 15 minutes. Allow the scones to cool slightly before serving.
