Ingredients for the glaze
1. Preheat the oven
Preheat the oven to 180°C (350°F) with a rack in the center of the oven. Line the bottom of a cake tin (diameter 26 cm/10″) with baking paper.
2. Make the batter
Wash a lemon and grate the zest. Then squeeze half of the lemon and set the other half aside. Mix flour, a pinch of salt, baking powder, and baking soda. Set the mixture aside. Beat the eggs with the sugar until thick and creamy. Stir in the oil, lemon zest, and lemon juice, then the buttermilk and flour mixture.
3. Bake
Pour the finished batter into the baking tin and smooth it out. Bake in the preheated oven for about 20 minutes. After baking, let the cake cool on a wire rack.
4. Prepare the glaze
In a bowl, mix the icing sugar with the juice of the remaining lemon until smooth. Pour the glaze over the cooled cake and spread evenly. Garnish with lemon quarters and sugar sprinkles as you like, and leave to dry briefly.
