1. Activate the yeast
Dissolve the yeast with 1 teaspoon of sugar in 4 tablespoons of lukewarm water and leave it to stand until foamy. It takes about 5-10 minutes. Meanwhile, weigh and measure the ingredients.
2. Make the dough
In a bowl with flour, add a pinch of salt and pour in the milk, followed by the oil and activated yeast. Knead well with the dough hook of the hand mixer. After kneading, cover the dough with a tea towel and let it rise in a warm place for about 1 hour or until it doubles in size.
3. Shape the dough
Transfer the dough to a lightly floured surface, knead a few times with your hands, and then roll out into a large rectangle (about 35×45 cm/14″×18″) using a lightly floured rolling pin. Spread the filling, and roll up the dough from the long side. At this point, transfer the rolled-up dough onto a baking parchment; otherwise, it will be difficult later.
Cut the rolled up dough in half and wrap the two strands around each other. Pay attention not to cut the dough all the way through at one end. Slide the baking parchment with the dough on it onto a baking tray.
Cover with cling film and a kitchen towel, and leave to rest for half an hour.
4. Bake
Preheat the oven to 180°C (350°F). Whisk together the egg yolk and milk, brush over the bread, and sprinkle with sesame seeds and/or linseeds, if desired. Bake on the middle rack for about 25 minutes, or until golden brown.
5. Serve
Allow the bread to cool slightly after baking.
