Ingredients for the chocolate coating
1. Preheat the oven and prepare the tin
Preheat the oven to 160°C (320°F) and grease a 24cm (9″) Bundt mold.
2. Weigh and measure the ingredients
Have the ingredients ready.
3. Make the batter
In a large mixing bowl, beat the eggs, sugar, and vanilla sugar with an electric mixer for at least 5 minutes.
Pour in the oil and mix at a low speed to combine. Gradually fold the flour, baking powder, and a pinch of salt until no flour lumps remain in the batter. Finally, pour in the milk and combine.
Pour evenly about ¾ of the batter into the prepared Bundt tin.
To the remaining batter, add the cocoa powder, mix well, and cover the light batter with it. Use a fork or spatula to make a nice swirl with the light and dark batter. Don’t overdo it. In the end, you want a marble pattern and not a solid colour.
4. Bake
Bake for about 40 minutes or until the top is golden-brown.
Take the cake out of the oven and let it cool in the mold for a few minutes. Then remove from the Bundt tin and let cool completely on a wire rack.
5. Make the chocolate coating
In the meantime, roughly chop the chocolate. In a suitable heatproof bowl, combine the chocolate and a teaspoon of coconut oil.
Place the bowl over the hot water bath, making sure the bottom doesn’t touch the water. Melt the chocolate slowly over low heat, stirring from time to time, until smooth.
Finally, pour the melted chocolate onto the Bundt cake and let it set before slicing.
