Ingredients for the Egg Wash
1. Preheat the Oven
To start, preheat the oven to 200°C (390°F) and line a baking tray with a sheet of baking parchment.
2. Make the Dough
In a large mixing bowl, combine 300 grams of plain flour with 1 ½ teaspoons of baking powder and a pinch of salt. Stir these ingredients until they are well mixed.
Pour in 80 grams of melted, unsalted butter and 180 grams of yogurt. Using a spatula or your hands, mix the ingredients until a dough forms. The dough should be soft but not too sticky. If it feels too sticky, add a bit more flour.
3. Roll out the Dough
Transfer the dough to a lightly floured surface and cut it in half. This makes it easier to handle.
Take one half of the dough and roll it out into a circle approximately 35 cm (about 14 inches) in diameter and about half a centimetre (¼ inch) thick.
4. Shape and Fill the Rolls
Using a pizza cutter or a sharp knife, divide the dough circle into 8 equal triangles. Place a small amount of the filling of your choice (chocolate spread, cream cheese, jam, or jelly) on the wide end of each triangle. Starting at the wide end, roll each triangle towards the tip, creating a half-moon shape. Place the rolled triangles on the lined baking tray, leaving some space between each roll.
Repeat the rolling, filling, and baking process with the remaining half of the dough.
5. Prepare the Egg Wash
In a small bowl, whisk together the egg yolk and 1-2 tablespoons of milk. Using a pastry brush, lightly brush the egg wash over each roll. This gives them a golden brown colour when baked.
Sprinkle sesame seeds on top of the rolls, if desired. This adds a nice crunch and flavour.
6. Bake
Place the baking tray in the preheated oven and bake at 200°C (390°F) for about 15 minutes, or until the rolls are golden brown and baked through.
Once baked, remove the rolls from the oven and allow them to cool slightly on a wire rack before serving.
Variations
These Quick Rolls without Yeast are incredibly versatile and can be customised to suit your tastes. Here are a few ideas:
Savoury Rolls: Fill the rolls with savoury ingredients like cheese, ham, or cooked spinach and feta.
Sweet Rolls: Use sweet fillings like cinnamon sugar, apple pie filling, or chocolate chips.
Toppings: Besides sesame seeds, you can use poppy seeds, sunflower seeds, or even coarse sugar for a sweet crunch.
These rolls are perfect for breakfast, brunch, or as a snack. Serve them warm with a cup of coffee or tea, or pack them into lunchboxes for a delicious treat.
Storage
