Ingredients for the Brownie Batter
1. Prepare the Cookie Dough
In a large mixing bowl, cream together 75 grams of caster sugar, 80 grams of brown sugar, and 110 grams of softened unsalted butter until light and fluffy. Add 1 egg and mix until incorporated.
In a separate bowl, whisk together 155 grams of plain flour, 1 tablespoon of cornstarch, ½ teaspoon of salt, ½ teaspoon of baking powder, and ½ teaspoon of baking soda.
Gradually add the dry ingredients to the wet ingredients and stir until just combined. Stir in 150 grams of chocolate chips.
2. Chill the Dough
Cover the dough and let it rest in the refrigerator until the brownie dough is ready. You can also refrigerate the dough for up to 24 hours so you can make it in advance, if preferred.
3. Preheat the Oven
Preheat your oven to 180°C (350°F) and line a 22×22 cm (9”×9”) baking tin with baking parchment. Leave some overhang for easier removal.
4. Prepare the Brownie Batter
In a heatproof mixing bowl, combine 115 grams of unsalted butter and 200 grams of roughly chopped chocolate. Create a double boiler by placing the mixing bowl over a saucepan of simmering water. Ensure the bottom of the bowl does not touch the water. Melt the chocolate mixture, stirring occasionally, until smooth and well blended. Once melted, set it aside to cool.
In a separate mixing bowl, combine 200 grams of caster sugar, 70 grams of brown sugar, and 3 large eggs. Whisk until the mixture is smooth and fluffy.
Pour in the melted butter-chocolate mixture and mix until fully incorporated. Sift 70 grams of plain flour, a pinch of salt, and 25 grams of cocoa powder. Fold gently until just combined, being careful not to overmix.
5. Assemble the Brookies
You have different options for assembling the brookies.
I poured approximately ⅔ of the brownie batter into the prepared baking tin. Then I broke half of the cookie dough into chunks and placed them over the brookie batter, leaving some space for a marbled effect.
After spreading the cookie dough, I poured the rest of the brownie batter over the cookie dough. Finally, I distributed the rest of the cookie dough on top.
So I have a layer of brownie batter, a layer of cookie dough, followed by a layer of brownie and topped with cookie dough.
Another option is to pour all the brownie batter into the prepared tin and spread the cookie dough evenly on top, creating two layers. Or the other way around: cookie dough on the bottom and brownie batter spread on top.
In the end, it’s a matter of taste how you do it;)
6. Bake
Bake the brookies in the preheated oven for 25-30 minutes, or until a toothpick inserted into the centre comes out with a few moist crumbs. Be careful not to overbake so that the brownies stay fudgy.
7. Serve
Let the brookies cool in the baking tin for about 20 minutes, then lift them out using the baking parchment overhang. Allow them to cool completely before cutting them into squares to create clean cuts.

Chill the Cookie Dough: You can prepare the cookie dough in advance and keep it wrapped in cling film in the refrigerator for up to 24 hours.
Serve Warm: These Brookies are delicious slightly warm, with the chocolate still melty. For a special treat, serve it with a scoop of vanilla ice cream.
Storage: Store brookies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
