1. Preheat the Oven
Preheat the oven to 180°C (350°F) and prepare a 26cm (10”) diameter baking tin or ring by greasing it.
2. Make the Batter
In a heatproof bowl, melt 200 grams of unsalted butter and 200 grams of chocolate over a pan of simmering water. Once it has melted, set it aside to cool.
In a large mixing bowl, whisk together 4 eggs and 160 grams of caster sugar until light and fluffy. Add 200 grams of ground almonds, 1 teaspoon of baking powder, and a pinch of salt. Mix until smooth.
Pour in the melted butter chocolate mixture and mix until well blended. Spread the cake batter evenly into the prepared baking tin and smooth it out using a spatula.
3. Bake
Bake the Gluten-Free Chocolate Cake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the centre comes out clean.
Once baked, allow the cake to cool completely in the baking tin before removing it. Gluten-free cakes can be more delicate, and removing them too early may cause them to break.
4. Make the Topping
In a mixing bowl, beat 200 millilitres of whipping cream at medium-high speed until it starts to thicken. Gradually add 2 tablespoons of icing sugar while continuing to beat the cream. Continue beating until the cream forms stiff peaks. Once whipped to your desired consistency, spread the whipped cream over the cooled chocolate cake. Garnish the chocolate cake with chocolate shavings before serving.
5. Serve
Allow the topping to set before slicing and serving. Enjoy your Gluten-Free Chocolate Cake.
