1. Activate the yeast
In a small mixing bowl, dissolve the yeast with 1 teaspoon of sugar in 4 tablespoons of lukewarm water and leave it to stand until foamy. It takes about 5-10 minutes.
2. Make the dough
Heat 250 millilitres of milk in a saucepan and melt 75 grams of unsalted butter in it. Allow it to cool to room temperature, then add an egg along with 75 grams of caster sugar and whisk.
Weigh 550 grams of plain flour, add a pinch of salt, and stir briefly. Add the milk mixture as well as the yeast. Knead with the dough hook of the hand mixer for 5-10 minutes.
After kneading, cover the dough with a tea towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
3. Assemble the wreath
Transfer the dough to a lightly floured surface, knead a few times with your hands, and then roll out into a large rectangle (about 40×60 cm/16″×24″) using a lightly floured rolling pin. Spread the filling, and roll up the dough from the long side. At this point, transfer the rolled-up dough onto a baking parchment; otherwise, it will be difficult later.
Cut the rolled-up dough in half lengthways and wrap the two strands around each other. Pay attention to the fact that the sliced jam side is on top. Form a wreath shape by bringing the two ends together. Slide the baking parchment with the dough on it onto a baking tray.
Cover with cling film and a kitchen towel, and leave to rest for half an hour.
4. Bake
Preheat the oven to 180°C (350°F). Once the oven is ready, remove the plastic wrap and kitchen towel covering the shaped dough, then bake until golden brown and fragrant, about 35 minutes.
5. Make the glaze
Once the dough is baked and golden brown, remove it from the oven and let it cool slightly on a wire rack. While it cools, prepare the glaze by mixing 100 grams of icing sugar with 2-3 tablespoons of lemon juice until smooth. Drizzle the glaze over the slightly cooled wreath and let it drip down the sides.
6. Serve
