1. In a saucepan, combine 450 grams of berries, 2 tablespoons of honey, and the juice of half a lemon over medium heat.
2. Stir the mixture occasionally until the berries begin to break down and release their juice (about 5-7 minutes).
3. Once the berries are soft, gently mash them with a fork or potato masher until the desired consistency is reached. For a smoother consistency, purée the jam with an immersion blender.
4. Reduce the heat to low and stir in 2 tablespoons of chia seeds.
5. Cook the mixture over low heat, stirring frequently, for another 5 minutes or until the jam has thickened to your liking.
6. Remove the pot from the heat and let the jam cool for a few minutes.
7. Pour the jam into clean, sterilized jars (450 ml) and allow to cool completely before sealing.
8. Store the Mixed Berry Chia Jam in the refrigerator for up to two weeks.
9. Enjoy your homemade Mixed Berry Chia Jam on toast, yogurt, oatmeal, or as a topping for desserts!
