Ingredients for the glaze
1. Preheat the oven
Preheat the oven to 180°C (350°F) and grease a 23 cm (9”) baking tin. Adjust the oven rack in the middle.
2. Prepare the batter
Start by peeling and dicing the apples. Pour the juice of half a lemon over them, give it a whisk, then set aside.
In a mixing bowl, whisk together 240 grams of plain flour, 1 ½ teaspoons of baking powder, ½ teaspoon of baking soda, ½ teaspoon of cinnamon, and a pinch of salt.
In another mixing bowl, combine 110 grams of melted butter, 240 grams of cashew paste, 160 grams of sugar, 120 grams of apple sauce, and a teaspoon of vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples.
3. Bake
Pour the batter into the prepared cake tin and bake for 40-45 minutes, or until a toothpick inserted into the centre comes out clean. Allow the cake to cool completely before glazing.
4. Prepare the glaze
While the cake is cooling, stir together 120 grams of cashew paste and 2-3 tablespoons of honey. Gradually add milk until the desired frosting consistency is reached.
5. Serve
Once the cake has cooled, drizzle the cashew glaze over the top and scatter a handful of chopped cashews on top. Allow the glaze to set before slicing.
