1. Buttercream Frosting
In a mixing bowl, beat 250 grams of softened butter until smooth and creamy. Gradually add 300 grams of icing sugar and mix at low speed until well combined. Add 2 tablespoons of milk and, if using, 1 teaspoon of vanilla extract. Beat at medium-high speed until light and fluffy, about 3-5 minutes. Adjust the consistency by adding more icing sugar for a thicker icing or more milk for a thinner icing. Optionally, add sprinkles for some colour or food colouring.
2. Glaze Icing
In a mixing bowl, whisk together 200 grams of icing sugar and 2-3 tablespoons of lemon juice until smooth. Adjust the consistency by adding more liquid for a thinner icing or more icing sugar for a thicker icing. Add food colouring if desired. Dip the cookies into the glaze or drizzle over the cookies using a spoon or piping bag. Allow the glaze to set before serving.
3. Cream Cheese Frosting
In a mixing bowl, beat 200 grams of softened cream cheese and 60 grams of butter until smooth. Gradually add 250 grams of icing sugar and mix until well blended and creamy. Add 1 teaspoon of vanilla extract and continue beating until fluffy. If necessary, adjust the consistency with more icing sugar to create a thicker icing. Add a few drops of red food colouring depending on your desired colour.
4. White Chocolate Coating
Melt 200 grams of white chocolate with a teaspoon of coconut oil over a water bath. Pour the melted chocolate into a bowl and add 3-4 drops of red food colouring. Run a toothpick through it a few times to create a marble effect. Dip the cookies into the coating or drizzle over the cookies using a spoon or piping bag.
