1. In a food processor, combine ripe avocado, lemon juice, chopped spring onions, minced garlic clove, crumbled feta cheese, finely chopped dill, Greek yogurt, and mustard.
2. Season with salt and pepper to taste.
3. Pulse or blend the ingredients until a smooth and creamy consistency is achieved.
4. Taste the dip and adjust the salt, pepper, and lemon juice as needed.
5. Pour the blended mixture into a bowl. Before serving, place the dip in the refrigerator for at least 30 minutes to allow the flavours to develop.
