1. Activate the yeast
In a small mixing bowl, dissolve the yeast with 1 teaspoon of sugar in 4 tablespoons of lukewarm water and leave it to stand until foamy. It takes about 5-10 minutes.
2. Make the dough
In a large mixing bowl, whisk together the flour and a pinch of salt. Add 100 millilitres of lukewarm water, 100 millilitres of lukewarm milk, 50 millilitres of vegetable oil, and activated yeast. Knead until all the ingredients are well combined. Cover the dough with a tea towel and let it rise in a warm place for about an hour, or until it has doubled in size.
3. Shape the dough
Once the dough has doubled in size, transfer it to a lightly floured surface. Shape the dough into a rough circle or rectangle about 2.5 cm (1″) thick. The dough can be of any shape as long as it is uniform in thickness. Take a round cookie cutter and dip it in some flour. Cut out as many scones as possible, knead the remaining dough again, and repeat the process. I got fourteen scones in total.
4. Fry the scones
Place a non-stick frying pan over low heat. You do not need any oil to fry the scones. Fry the scones on one side for approximately 3 minutes, then flip them over. Bake the other side of the scones for another 3 minutes, or until golden brown.
5. Serve
The yeast scones are best enjoyed warm. Serve with your favourite dishes and spreads.
