1. Mix the sugar with the water in a saucepan and heat it up.
2. Melt the mixture over low heat and allow it to caramelize until light brown without stirring. This may take some time, so be patient.
3. Add the butter in small portions and stir it in.
4. Finally, carefully pour in the whipping cream and stir everything together. Simmer the caramel sauce over low heat for about 10 minutes.
5. It will be creamy, but it will firm up a bit as it cools.
6. Pour the sauce into a clean jar (approximately 250 ml) and let it cool.
7. The caramel sauce will keep in the fridge for up to three weeks.
