1. Prepare the potatoes
Start by peeling and grating the potatoes. Finely chop the red onion and place it in a mixing bowl along with the grated potatoes.
2. Prepare the batter
In a separate small mixing bowl, crack the two eggs and add salt to taste, plain flour, and rolled oats. Thoroughly mix the ingredients and add them to the grated potatoes and onion.
3. Fry the pancakes
In a frying pan, pour enough vegetable oil to cover the bottom, and then heat the oil over medium heat. Using a spoon or ladle, portion out the batter into the hot oil to form the pancakes. Cook until they are golden brown and crispy on both sides. You can always add more oil as needed while frying if it begins to dry out.
4. Serve
Once fried, drain excess oil on paper towels and serve the Kartoffelpuffer hot as a side dish or main course. Try my homemade applesauce with the Kartoffelpuffer, it pairs wonderfully with the potatoes.
