1. Prepare the vanilla cream
Start by cutting the vanilla pod lengthwise and scraping out the pulp. In a saucepan, combine the whipping cream, vanilla pulp, and caster sugar. Heat the mixture over medium heat and bring it to a gentle boil.
Reduce the heat to a simmer and continue cooking for about 5-8 minutes. Stir occasionally and make sure nothing burns. When the mixture thickens slightly, remove it from the heat.
2. Prepare the gelatin
While the vanilla cream is cooling slightly, prepare the gelatin according to the package direction. Once the gelatin is ready, add it to the vanilla cream, stirring thoroughly until well combined.
3. Pour into glasses
Carefully pour the vanilla cream into two larger or four smaller glasses. Place them in the fridge to cool and set. This will take at least 3 hours.
4. Prepare the topping
If using plum jam or any other jam of your choice, just spoon 2 tablespoons of it onto each Panna Cotta. Alternatively, if using fresh fruit, toss the fruit with icing sugar in the food processor and blend it. Spoon the fruit mixture over the Panna Cotta.
5. Serve
Serve the delicious Panna Cotta chilled, garnished with your chosen topping.
