1. Prepare the Dough
In a large mixing bowl, combine 300 grams of plain flour, 1 ½ teaspoons of baking powder, and 1 teaspoon of salt. Add 60 grams of unsalted butter and 2 tablespoons of olive oil to the flour. Use a pastry cutter or your fingers to blend the butter in until it resembles coarse crumbs. Gradually add the water, kneading until a cohesive dough forms. You may not need all the water, so add it gradually. Incorporate 1-2 teaspoons of dried thyme into the dough; adjust the amount to suit your taste. Wrap the dough in cling film and let it rest for 30 minutes in the refrigerator.
2. Preheat the oven
Preheat the oven to 180°C (350°F) and line two baking trays with baking parchment.
3. Shape the dough
Once chilled, divide the dough into smaller portions for easier handling. On a lightly floured surface, knead each portion briefly, then roll it out thinly. Using a 6 cm (2.4″) diameter cutter or any other you have, cut out circular shapes from the dough. Transfer the circles to the lined baking tray, leaving a little space between each cracker.
4. Poke Holes
Using a toothpick or a wooden skewer, poke 7 holes in each cracker — one in the centre and six around it. The holes give the crackers a nice finish and prevent them from puffing up too much during the baking process.
Proceed with the remaining dough in the same way until all the dough is used up.
5. Bake
Place the trays in the preheated oven and bake for approximately 10 minutes, or until the crackers turn golden brown.
While the crackers bake, melt 20 grams of butter. Once golden brown, remove the crackers from the oven. Brush each cracker with melted butter and sprinkle a pinch of salt over the top of each according to your preferences. Turn the crackers over, brush the other side of them with melted butter, and sprinkle a pinch of salt on top. Return the crackers to the oven for an additional 2 minutes to achieve the desired crispiness.
6. Serve and Enjoy
Once baked, remove the crackers from the oven and let them cool on a wire rack. Store any leftovers in an airtight container at room temperature to maintain freshness.
